La fragilité des systèmes agroalimentaires localisés. Une comparaison internationale sur le cas des systèmes fromagers
Abstract
Les systèmes agro-alimentaires spécialisés (Syal) sontils capables de subsister dans des économies où dominent les entreprises industrielles et commerciales caractérisées par La production de biens et de services � grande échelle? L’objectif de cet article est d’apporter une réflexion empirique sur ce sujet � partir de résultats d’études réalisées dans des milieux socioéconomiques très différents et de rechercher en quoi lês fragilités ainsi que les capacités de construction et de résistance des Syal sont liées aux conditions générales de développement. Trois cas sont présentés, portant sur le même genre de produits alimentaires: des fromages. La méthode analytique employée permet de classer les trois Syal selon une échelle de fragilité. C’est dans le pays le plus industrialisé, la France, que la fragilité est moindre et c’est dans le moins développé, le Brésil, qu’elle est la plus grande. L’explication réside dans la capacité de construction sociale du Syal par ses acteurs, infiniment plus grande dans les sociétés industrialisées..Downloads
